Gilles & Catherine Vergé

Viré - Bourgogne

Gilles and Catherine have 5 hectares of Chardonnay vines is southern Burgundy. Their vines are planted on clay and limestone soil that dates from the Jurassic period. The vines themselves range from 54 to 126 years old. Most of the vineyards fall in the appellation Viré-Clessé but for the most part they choose to label their wines as Vin de Table.

They work their vineyards organically doing everything by hand. Gilles vinifies each vineyard separately using indigenous yeast. The wines spend no time in oak barrels, instead their long elevage takes place only in stainless steel vats. No sulphites are used at any stage.
