Simon learnt winemaking and vineyard management with Olivier Cousin in the Loire. He took his learning back to his father's vineyards in the South West where he now works his small vineyard area by horse, just as Cousin does. We are so used to big, bruiser wines from Cahors but Simon makes wines with an extraordinary mineral delicacy. The Pur Côt, which is 100% Côt (Malbec) from a vineyard planted 40 years ago, has a really dense nose which you would expect but very playful acidity and an irony minerality.
